I’m feeling contrary today, so I’m stretching the rules to include candy. I’ve been craving peanut butter fudge recently, and this year I’m including it with the cookies I give to friends and family for Christmas. That makes it sort of a cookie, right?
PEANUT BUTTER FUDGE
- 4 cups sugar
- 1 cup milk
- 2 cups peanut butter
- 1 Tablespoon butter
- 1 teaspoon vanilla
- optional: chopped peanuts or a few chocolate chips
Combine the sugar and milk in a pan and using medium heat, bring to a boil, stirring occasionally. Once it starts to boil, stir constantly. Set a timer and boil for exactly four minutes. Stir in remaining ingredients and beat until smooth. Spread in a buttered 9″ x 11″ pan to cool. Top with chopped peanuts or drizzle with melted chocolate chips, if desired.
